In the whole central territory of Sardinia it is possible to taste different typical dishes from pasta to meat and fish. Among the first courses, culurgiones, fresh ravioli filled with mashed potatoes and cheese are the most popular.

Tortolì and Bari Sardo are well known for their fish and crayfish soups, cuttlefish black ink risottos, spaghetti with bottarga, mullets' salted eggs and lobster. Getting away from the coastal area, the ancient agro-pastoral tradition strongly stand out, offering some strong and tasteful dishes like su tattaliu or sa cordula.

They are made from lamb or goat intestines and offal; the former is prepared by cooking the intestines on a skewer, while the latter presents the offal tied together by the intestines. Both are served as a main course.

Cheese, either mellow or mature, is made with sheep's milk and is the king of any meal together with Cannonau, a fully bodied red wine. For a smooth digestion, try the excellent Sardinian spirits, like the myrtle (myrtle-flavoured liquor), the limoncello or the filu 'e ferru (local eau de vie).

Wines are very good too, mostly made from autochthon grapes. Finally, give a try to the Ichnusa, fresh and crisp local lager.
